I'd be interested in tips on using Cooledit for doing cleaning up of
tapes and any other useful tricks for analog to CD processing.

One weird bug I seem to have found is that occasionally I find that one
second of music is mysteriously repeated 3 or four times and I have to
redo the CD. I think it's getting introduced during the actual recording
process. My usual postprocessing is to centre the wave, do a noise
reduction using a sample from a piece of the tape that's blank, and then
normalising the wave.
